A single vineyard wine, Pinot Meunier and Pinot Noir were harvested in the cool of night and delivered directly to the winery. Destemmed into the press for gently colour extraction during pressing. Taking only free run juice of the Pinot Meunier and Pinot Noir were pressed directly to seasoned French oak barrels and left to begin wild ferment which started after 24 hours. After ferment the wine was kept on fine lees for 6 months to build texture and go through partial malo-lactic fermentation.

TASTING NOTES:
Vibrant salmon pink. Notes of crushed rose petal, red apple skin, toasted biscuit and cherry blossom. The palate has a lovely creamy mousse finished with crips citrus acidity balanced by a low dosage.
